I love flavored sugars and this easy 2-ingredient strawberry sugar recipe happens to be one of my favorites. Use it to add a little extra strawberry flavor and sweetness to everything from whipped cream, lemonade, and strawberry toast, or as a substitute for regular sugar in all kinds of baked goods and fruit sauces. It’s also a perfect way to sweeten a cocktail or rim a margarita glass.
What Kind of Strawberries to Use?
You only need two ingredients to make homemade strawberry sugar. Unsweetened freeze-dried strawberries and granulated sugar. Injecting a natural strawberry flavor into recipes is not as simple as adding pure vanilla, or even lemon zest because berries are full of water. So unless you’re working with a recipe that calls for adding whole or puréed strawberries, it can be especially difficult to get the pure essence of strawberries packed into a recipe.
And not all, but most commercial strawberry extracts are artificially flavored and taste as much. This is where freeze-dried strawberries can be helpful. By infusing sugar with 100% all-natural freeze-dried strawberries, you can add strawberry essence to lots of things without compromising your recipe with artificial ingredients, flavors (or extra water).
Homemade Strawberry Sugar Ingredients
All you need is two ingredients to make this easy flavored sugar. It adds a nice fruity twist to all kinds of baked goods, drinks, and cocktails.
- 1 cup white granulated sugar (200g)
- 1/4 cup 100% natural freeze-dried strawberries (7g)
*You may double the amount of freeze-dried strawberries to 1/2 cup (14g) if you want even more strawberry flavor.

Freeze-Dried Strawberries Tips & FAQ’s
- Can I use fresh strawberries to make strawberry sugar? No, this recipe is made with freeze-dried strawberries which have had the water removed. Fresh strawberries would have too much water.
- Can I use dehydrated strawberries instead? Dehydrated and oven-dried strawberries cannot be used to make strawberry sugar because they contain too much water.
- Is this strawberry sugar recipe vegan? I’ve used granulated sugar for this recipe which some vegans consider acceptable, but for strict vegans, you must instead use vegan-friendly raw cane sugar, certified-organic cane sugar, or sugar made from 100% beets. Why is this? Because refined sugars made from sugar cane processing with bone char to achieve their clear white color making them unacceptable for strict veganism. Some brown sugar (those using molasses) also use the bone char processing method so they too should be avoided when making homemade vegan strawberry sugar.
- Are freeze-dried strawberries healthy? Yes, 100% natural freeze-dried strawberries are very good for you. In fact, they hold up to 90% of their original nutritional content throughout the freeze-drying process. This means you can get still get your Vitamin A, Vitamin C, and fiber on the go! Just be sure sure to purchase freeze-dried strawberries without added sugars or preservatives. Freeze-dried strawberries are also great for helping regulate blood sugar, and like other berries, they have immune-boosting properties.
