And finally, they're slathered with a sweet and spicy BBQ sauce before caramelizing under the broiler for a few minutes which gives them their signature faux "bark" (that crispy sticky "crust" that adds even more flavor and "just-grilled" texture).
Remove the Membrane From Pork Ribs Before Cooking Them
If you're cooking a rack of ribs (like baby back ribs or St. Louis-style ribs) you may notice a shiny tough membrane on the backside. You need to remove this membrane before cooking because otherwise, it becomes really tough and chewy. It also allows the spice rub or any other seasonings you're using to have better contact with (and penetrate) the meat rendering it more tender and flavorful.
To easily remove the membrane from a rack of ribs, use your fingers or a sharp pointed object like a metal skewer or knife to get under the membrane and pull it up. Once you have a big enough piece you can grab onto, use a paper towel to grab it and pull it off completely.
