PACCHERI PASTA WITH SHRIMP & ZUCCHINI

PACCHERI IS A PASTA SHAPE EVERYONE WILL LOVE

A unique pasta shape with a"meaty", "slappy" texture.

YOU NEED JUST 8 INGREDIENTS + SALT

Paccheri, Shrimp, EVOO, Pasta Sauce, Basil, Garlic, Chili Peppers, & Wine.

LIGHTLY FRY THE ZUCCHINI 

Season with salt and remove when golden brown.

SAUTÉ THE AROMATICS

Cook garlic, chili and basil in 1 tbs of EVOO until blistered and fragrant.

SAUTÉ THE SHRIMP

Season w/salt & cook shrimp for 2 min. until opaque, flip & cook 30 more seconds & remove from pan.

REST THE SHRIMP

Shrimp will finish cooking when you add them to the sauce later on. This way, they won't be rubbery!

COOK THE PASTA

Cook the pasta in salted boiling water to al dente doneness according to package directions.

ADD THE WHITE WINE

Deglaze the pan w/wine & cook it for 3 min. to allow the alcohol to cook off.

ADD THE PASTA SAUCE

And cook it for a couple of minutes.

ADD THE ZUCCHINI

Give it a stir.

ADD THE SHRIMP

(At this point, you could even use this to make shrimp & zucchini bruschetta...it's awesome!)

ADD A BIT OF STARCHY PASTA WATER

Adding pasta water makes the sauce taste better and stick better to the noodles.

ADD THE PASTA 

Toss everything together and serve!
