Flour, yeast, sugar, salt, EVOO, and water.

FORM A SHAGGY DOUGH BALL

And knead for 10 minutes  until...

KNEAD THE DOUGH

Until it's smooth and elastic (and no longer looks wet).

LET IT RISE  (1ST RISE)

Add dough to a lightly oiled bowl, cover and let rise 90 minutes.

PUNCH DOWN THE DOUGH

Remove the any air bubbles and portion the dough into 4 pieces.

FORM 4 EQUAL  PIZZA DOUGH BALLS

Cover and let rise for 30 more minutes.

READY DOUGH WILL LOOK LIKE THIS!

Soft, airy, and plump.

ROLL OUT THE DOUGH

Roll it out to 1/8-inch thick.

TIME TO SAUCE IT

Add 1/4 cup pizza sauce and spread it out then sprinkle with Grana Padano.

ADD MOZZARELLA

Regular freshly grated, fior di latte, & fresh bufula mozzarella are all excellent choices!

BAKE THE PIZZA 8 MIN. @ 480°F/250°C.
